in other words why not consider getting some of your work submitted to competitions like this,
or plan to collaborate on an external project over the summer to submit later.

I’ve got an idea for something, I just don’t know how the hell I’d go about doing it.
What would happen if we submitted an external project, how would it count towards final grades?

in all honesty it would count towards you showing initiative and having another killer piece of work for your showreel. The better the showreel and experience, the better your chances are of standing out.
Its also the sort of thing that employers love to hear about, that extra spark of get up and go i.e. my work was exhibited in this or that festival etc.
